Oh, Yum! There are 31 scrumptious recipes On The Menu this week! I’ve been in such a cooking mood lately! And it seems that there are so many recipes just begging me to make them. I’m so excited for spring so this week’s menu is a mix of hearty winter recipes and delicious early spring ones too!
Here’s what’s On The Menu this week…
MONDAY
Mondays are the busiest day of my work week. I do a lot of styling and photoshoots and lots of other bloggy-type things. I like to plan a meal that is easy to make or one that does not have so many pans and moving parts! Although dinner tonight is a bit more involved, it’s quite easy! And Chicken Piccata is just so tasty!
Chicken Piccata is one of my favorite meals. Delicious, lemony, and easy to make. Treat your family to this company-worthy meal.

And the Ceaser salad on the menu pairs wonderfully with the Piccata.
TUESDAY
We are such carnivores here at StoneGable! And we love steak in all its forms! This is such a beautiful recipe! If you can’t find steak tips try using flank steak.
We don’t eat steak and beef as often as we once did. So when we have it we really enjoy it!

WEDNESDAY
Our family was here for a long weekend and my daughter Jacqueline made us this fabulous dinner using the recipes below. This is now one of my very favorite dinners! And guess what… she left the leftovers. Delicious and fresh! A must-try!

THURSDAY
Have you ever had Bonefish Grill’s Bang Bang Shrimp? If not make reservations tonight and GO!
Really, they are addictive and absolutely scrumptious. My son Christopher and I went to lunch on Saturday and shared a pile of them.
I’m ready for a copycat version I can make at home anytime I want this delicious dish! And I’m thinking I can probably use the recipe to make Bang Bang Chicken!

FRIDAY
Salmon is a hearty fish that is heart-healthy too. And it is even better when served with a sweet and garlicky sauce! Wild-caught salmon is pricy but so healthy so this is a meal I splurge on! And I am not a fan of Sockeye Salmon I opt for another variety of wild-caught.
I like to cook an easy dinner on Fridays because Bobby and I usually watch a show or play cards or a game. This salmon dinner cooks up in about 15 minutes to it is perfect for a Friday night in.

SATURDAY
I must make my Perfect Roast Chicken at least every other week. That and homemade Rotisserie chicken. I found an electric rotisserie for $3.00 at a garage sale years ago and it makes the best darn chicken. Even if a roast chicken is not on the menu I’ll make a couple (don’t make just one) and use the meat for lunches and other dishes as well as the carcass for stock. This is true home cooking comfort food. And it will make your house smell delicious too!
I must retake the images for this O-L-D post and update my recipe a bit. But until I do the chicken does come out amazingly delicious!

- ROASTED CARROTS- put around the chicken and roasted in the pan drippings
SUNDAY
I’m having an old-fashioned Sunday dinner here today. My son Christopher will love single-serve meatloaf with bacon. It’s all about bacon, right?

TREAT OF THE WEEK
Oh YUM! We all love carrot cake! And I especially love this cake because it is made in a 9 x 13 pan! I’m going to try to make it early in the week and freeze it and then thaw it and ice it for our family dinner.
I’m also thinking ahead for Easter and wouldn’t this be delicious and easy? You might want to keep this carrot cake in mind for your Easter dinner. Easter will be here sooner than you think!

This post is a long time coming, but I wanted to comment on your beef brisket recipe you had at Christmas. My son and his wife couldn’t come until the 26th, but I made the brisket on Christmas Day in the crockpot. They got delayed by traffic and didn’t arrive until almost 9 p.m., so we didn’t have the brisket that day. My son got a stomach bug the next day, so we didn’t have it then. They went out with friends for the next two evenings, so the brisket stayed in the refrigerator. We finally had it on Thursday, and it was absolutely delicious. I will definitely be making it again.
Oh, I hope everyone is back to good health. And it the brisket does get better with age.
Yvonne, I always love your weekly menus. It’s so nice to get sides to go along with the meal. Also I love your rattan placemats in the pic this week. Can you share where you purchased them?

Oh my gosh, Yvonne, please stop with these delicious recipes! Sad to say, I need to be low sodium/salt, low sugar and low cholesterol in my life, every day. Heart issues, high blood pressure and need to keep my salt and sugar intake at a minimum. Any ideas on how to adapt your delicious meals for all of us older people or with health issues at any age?
