ON THE MENU 231

One of my favorite things about summer is all the luscious local fresh vegetables and fruit we have in our area! Corn is abundant! And so is tomatoes, leeks, peaches, and watermelon. Hungry? Me too! Here’s what’s on the menu this week…

MONDAY- SLOW COOKER DAY

A slow cooker is my best friend on a busy day. Because at the end of the day I want to eat a good meal but I don’t have time to tend it! So by doing a little prep work on the front end of my day I can sit down to a great meal at the back end!

Bobby and I love Chicken Marsala. And this slow cooker recipe from Erin at Well Plated sounds delicious! I’ll add extra mushrooms for Bobby.

We usually serve Chicken Marsala over pasta but I have some potatoes I need to use up! This is a lovely comfort food meal!

TUESDAY

Have you ever eaten Tomato Pie? It is a scrumptious and gorgeous summer treat! When we have fresh from the field fresh tomatoes I can’t wait to make this recipe!

The first time I ever had Tomato Pie was when a friend brought it to StoneGable for dinner! It was heavenly! And I’ve been hooked ever since. The tomato pie I usually make has a pie crust but I love the crust in this new version!

WEDNESDAY

This is my favorite Salmon! I have to eat it a couple times a month! It is that good. Thanks for the recipe, Lyub at Will Cook For Smiles.

I also make it with marmalade instead of the zest of the orange and honey. I just use 3 TBS in its place!

THURSDAY

Tonight’s gorgeous recipe comes from Tieghan at Half Baked Harvest! Doesn’t this one-pot meal looks scrumptious?

I cook so many dishes in cast iron pans. They are heavy and can take the heat and create beautiful crusty, brown foods. A cast iron skillet is the perfect pan to make this company worthy summer dish!

FRIDAY

Tonight’s taco pizza, from Lauren at Tastes Better From Scratch, looks so so easy and looks so so good! I think one of my favorite foods in the world is tacos! However, they are messy to eat. I love this pizza spin on tacos! A bit easier to handle and cute!

SATURDAY

We love crab! And since we live 15 minutes from the Maryland State line it’s just a short drive to the Chesapeake Bay! So things like a bushel of blue crabs and crab cakes are some of our favorite gifts from the sea!

Tonight’s recipe comes from Sally’s Baking Addiction. Sally talks about the ever ongoing debate about the best filler for a perfect crab cake. She uses a filler I’ve never used before. I’m giving it a try! Thanks, Sally!

SUNDAY

Can you tell that fresh locally grown corn is ready in our area? So many corn recipes! I am a HUGE corn lover so when it is in season I could eat it at every meal.

Tonight’s recipe is a very old StoneGable recipe! But it is delicious! Roasting the corn gives it a little char and sweetness! And adding bacon to the chowder adds a bit of smokiness and meaty flavor.

I’m serving the chowder with Beer Bread. This bread is so easy to make and really good! I like it best toasted the next morning for breakfast!

SWEET TREAT OF THE WEEK

Peaches are ripe and delicious and just about my favorite in-season fruit! Who wouldn’t want to eat peach cobbler from this beautiful cup and saucer? What a great idea from my friend Ann at On Sutton Place.

I love this Epic BAKED POTATO DINNER BOARD. I can’t use it now but I’m saving it for someday!

Pesto is my favorite. For me, it’s the taste of summer. I can’t wait to make this BEST PESTO PASTA SALAD.

  1. I’ll be going back for some of these yummy looking recipes and meal ideas. I’ve been coming up a little blah in the meals lately. On the stove now is Jim’s garden soup. Tomatoes, zucchini and potatoes are from his garden; it makes him so happy when I use the veggies!
