Summer is here and we are all about fresh, seasonal food and easy recipes! Cherries are local and so sweet right now. I’m using both sweet and sour cherries in recipes and eating them for snacks. And I’m making jam! Ready for 35 delicious recipes On The Menu?

Here’s what’s on the menu for the week of June 27th…

MONDAY

KABOBS are on the menu tonight! YUM! I think the combination of savory and sweet is a home run when it comes to flavor! These kabobs from Holly at Spend With Pennies look amazing and have that savory and sweet component I love so much! They are a wonderful summer recipe!

I’m making a big batch of Nani’s SAUTEED RICE, one of my favorite side dishes. So full of flavor! I’ll use it with leftovers for lunch and freeze some to have on hand when I’m short on time to make dinner!

I love to cook and try new recipes! So the majority of recipes you see OTM are new to you and to me too! And I can say with truthfulness, all of the recipes I’ve made On The Menu are delicious! I’ve never come across a recipe that was not what was portrayed!

I do however mix some StoneGable favorite recipes with all the new ones, like Nani’s Sauteed Rice and Caesar Salad. They are, to me, my authentic comfort food. And they are things I can make and know we love them. I hope you do too!

Its fun and adventurous to make new recipes! It certainly keeps culinary boredom at bay! But it is also comforting to eat food that is familiar to you, your roots, and your family! I call that a perfect mix!

TUESDAY

Speaking of a familiar summer recipe here at StoneGable!!!! I’ve made Panzanella Salad for decades!!!! My sister, the chef, introduced it to me and I’ve been loving it ever since. Tonight’s delicious Panzanella Salad comes from one of my very favorite food blogs, Natasha’s Kitchen,

This is a summer dish! I wait until I can get gorgeous tomatoes from our garden. But we don’t have those big gardens this year (so much less work) so we are not growing our own beautiful vegetables.

Thank goodness for our local farm stands. My favorite? Meck’s Produce! I found they have tomatoes that are vine ripened and almost have that taste of summer I crave in a tomato.

It’s so nice to be able to eat Panzanella Salad in June!!! If you can find good-tasting tomatoes you should try this salad.

We eat it like a main course. Tonight Bobby is going to grill a big bunch of chicken and we will top off the salad with a chicken breast.

WEDNESDAY

Don’t you love One Pot meals? Tonight’s dinner from Jack and Martha Pesa at A Family Feast and is a real winner for many reasons. And I’m so glad it is on the menu!

It satisfies my tastebuds with its Tex-Mex vibe, it is made in one pot (oh thank you!), it dispels the myth that pasta can only be cooked by itself in a big pot (ugh) of boiling water and it uses cellentani pasta! Thank you dear Pesa family!!!!

I love this recipe for yet another reason. When I see a recipe like this I think of it as a prototype or a springboard for all kinds of creativity!

I think, “what do I have in the frig that would work in this dish”? Can I add fresh spinach to amp up the “greens”? Do I have a zucchini I better use? Can I use Taco seasoning instead of Italian? And I’m sure I’ll be using parsley instead of cilantro. I’m one of THOSE people. Cilantro tastes exactly like soap to me.

Change up the pasta, change up the meat, or a different texture by adding cream cheese. This recipe is culinary gold! I’m trying it just like Jack and Martha shared it, except for the cilantro. Well, at least at first!

The possibilities are endless!

THURSDAY

Look at this gorgeous flatbread pizza from Beth at Budget Bytes. Beth’s flatbread dough is super easy and is started the night before. I love that! I can make part of the recipe while Bobby cleans up the dishes and part of my dinner is done for the next day!!!

If you really don’t want to make the flatbread you can buy it. No judging! I use Lavash bread in a pinch. But try making it. There is something wonderful and magical about dough! Get your hands sticky and learn how to make this easy flatbread recipe.

When you read Beth’s ingredients you just know this is going to be a huge favorite! Oh, YUM!

FRIDAY

My husband Bobby is a big meat-lovin’ guy! Dinner is not really dinner without meat! But he also loves mushrooms. So tonight I’m trying a meatless meal over pasta.

Who wouldn’t love these beautiful stuffed and grilled mushrooms from Rachel Cooks! I’m a huge fan of Rachel and her site! I’ll be serving them over pasta with a sauce made from some of the ingredients in the mushrooms.

SATURDAY

The word “Caprese” is said in excited but hushed tones in our home! Caprese is given almost reverential status in our family! The combination of tomatoes, fresh mozzarella, and basil are a mash-up made in heaven!!! And that balsamic drizzle? No words!

I vividly remember the first time I ate a caprese sandwich on a crusty Italian roll. I was 34 years old! And I was in Middleburg Va. I can’t remember the Italian deli but I will never forget my first bite of this synergistic food trio!

I’ll make the polenta cakes as per the recipe but then I think I’ll try to air fry them. I love my air fryer!

SUNDAY

Artichokes are one of my favorite foods! And they are on the menu this week! Artichokes are certainly my very favorite veggie! Look at this glorious dish from Rosemary at An Italian In My Kitchen! When I saw this oh, so pretty dish I knew I had to make it and share it with you!

If you have never eaten artichokes I hope you will try them. I think they are one of the most delicious things you can eat!

Rosemary’s post does a wonderful job explaining how to handle, wash, clean, and cook artichokes and this dish is very easy and straightforward. I think it looks so impressive!

SWEET TREAT OF THE WEEK ON TE MENU…

Do you make icebox cakes? They are no-bake and perfect for summer! I love my friend Ann’s blog, On Sutton Place. She makes the yummiest recipes and more!

When I was first married my mother-in-law introduced the Pratt’s delicious version of the icebox cake. I had never even heard of an icebox cake before. Wow, I was missing out. I’ve been making icebox cakes for a long, long time and we all love them.

  1. I’ve made that Tex Mex pasta before from A Family Feast, and it is one of my winter favorites. Packed with flavor and lots of leftovers, it always on my menu.

  2. When I was first married I didn’t even know how to cook a hot dog. But, boy could I clean. My Mom did the laundry, ironing, and cooking, and I helped out with the other housework. Now, cooking is my hobby – the planning, shopping and preparing. I love all these recipes – especially the panzanella – I do different versions depending on the season.

    1. Wow, come and help me clean my house! Blogging keeps me so busy cleaning is tight to fit into my schedule!

    Hi Yvonne, I enjoyed reading about your jam making experiences. I also enjoy making jams to enjoy in the winter. I have made strawberry, raspberry, and blackberry this year. I’ve started using the pink box of SureJell. It uses less sugar – 4 cups- and allows the fruit taste to be more intense, I think.
    I really enjoy your Blog each day – decorating, recipes and especially devotionals. Keep up the great work because we all need your “pick-me-up” during these times!
