ON THE MENU WEEK OF MARCH 8TH

The menu for next week is filled with lots of new-to-me recipes. Do you like to try new recipes? I do! We certainly don’t get bored around here when is comes to dinners! I’ve done the planning for you and you have 26 recipes to choose from On The Menu!

MONDAY

My sweet daughter-in-law Abby suggested this delicious recipe from Erin at Platings and Parings! I can’t wait to try this beautiful recipe! Thanks so much, Erin!!!

TUESDAY

Tonight’s menu is such a classic and so easy family dinner! A roast chicken is such easy comfort food to make!

I’ll add celery, onion, and carrots to the roaster and let them cook in all those glorious chicken juices. YUM!

For decades and decades I whipped potatoes with a hand-held mixer until I tried a ricer! Wow! I love the texture of mashed potatoes riced instead of whipped! They are so much lighter and fluffy! You should give a ricer a try!

ROAST CHICKEN

WEDNESDAY

One of my favorite things to eat is a perfectly grilled hamburger! So tonight Bobby will give our grill a workout for the first time this season and make my favorite juicy hamburgers!

I’ve never posted them so here is the super easy recipe. For every pound of 80/20 ground beef gently mix in 1 packet of Lipton Onion Soup Mix, 1 TBS Worchestershire sauce and 1/3 cup of water. Don’t smoosh or over mix the ground beef or it will get compressed and tough!

Form meat mixture into hamburger patties indenting the center with your thumbs and gently grill them. It’s all about being gentle!!!!

THURSDAY

One of my very favorite flavor profiles is Mediterranean! It reminds me of sunshine! Tonight’s dinner is a glorious baked cod in a lemony sauce! I think my family will love it!

FRIDAY

Oooooh! I think this recipe will be one I’ll make often this spring. How easy and so delicious! Asparagus and other yummies wrapped in boneless, skinless chicken! Oh YUM!

A big thank you to Rena at Healthy Fitness Meals! I LOVE her suggestion in this post for making chicken not chewy! So true, Rena!

I’m always on the lookout for delicious recipes that use boneless, skinless chicken and has big flavor!

SATURDAY

Tonight’s dinner is so easy and delicious! I LOVE LOVE LOVE flatbread pizza! The first time I had it was at a restaurant called Harvest. YUM! Since then I’ve been making my flatbread pizza with storebought Lavash bread.

This week I’ll be making my own flatbread! Thanks so much, Valentina from Valentina’s Corner.

SUNDAY- FAMILY DINNER NIGHT

Oh, I love a good old-fashioned Sunday dinner! We are having a small get together so I’m making this glorious beef tenderloin recipe from Alli at Longhorn Farm! I’m so so enjoying this new-to-me blog! And I know you will too!

The muffin tin potato recipe is from the second month I was blogging almost 11 years ago! UGH! I certainly have come a long long way! The recipe is great but the photos! Oh my! I like this recipe so much I just may retake the pictures and revamp the post a bit! Do make this recipe it is a keeper!

Broccoli and garlic sauce are a match made in heaven. I’ll make the broccoli sans rice for tonight’s menu!

SWEET TREAT OF THE WEEK

There are two things I just love when it comes to something sweet. Using a box mix and lemons! This recipe has both! I am so excited to make these with my little Emma Kate!

I’m not promising they will look this gorgeous but we will have lots of fun!!!

  2. Wow – some great choices here. I am going to fix the asparagus stuffed chicken breasts tonight. I have prepared a similar recipe of pasta with sun-dried cream sauce before – thanks for the reminder. I love having a fully stocked pantry in times like these. It makes it easier to put together creative delicious meals and not have to leave the house. I’ve always said that there aren’t too many problems that can’t be helped by a good meal. Kind of simplistic, but it does help to know that at least we can eat well.
