Happy Spring!!! Spring is such a pretty season here in Lancaster County. The weather can still be very unpredictable but I just saw a hillside of yellow crocus and a gathering of robins this week so I know warmer days will soon be here. Ready for a yummy menu this week? Me too!

MONDAY
I’m so excited to make tonight’s dinner from Barbara at Butter And Baggage!
You know my love of Tex-Mex food and this recipe is easy! I have one pack of chicken left in the freezer and this recipe is worth using THE LAST CHICKEN!!!
We have three cans of vegetarian refried beans in the pantry. So I’ll be using them for dinner too!.

TUESDAY- SOUP
I’m part Hungarian and Polish so this cabbage roll soup speaks to my roots! Thank you so so much, Jaclyn at Classy Cooking. This recipe looks just so delicious! Jaclyn is an amazing foodie blogger!
I’ll add a pound of Bob Evan’s sage sausage to the hamburger. And a can of tomato soup to the mix too! This makes the soup taste like my Nani’s.
WEDNESDAY
We eat Pasta Carbonara pretty regularly at StoneGable! It’s such an easy meal!!! As long as I have eggs, parmesan cheese (yes, I use the green container shaky kind for this recipe- no judging) bacon, and pasta I can make this in less than 30 minutes. And it’s company-worthy!
Don’t miss the salad dressing post below. It’s an oldie but goodie. It’s a primer on how to make both oil-based and creamy salad dressings. I don’t care for bottled dressing. Making homemade salad dressing is so easy and so so much better than anything (except Gazebo Room) that comes out of a bottle.
THURSDAY- SLOW COOKER
Tonight I’m making an absolutely sublime recipe from Serene at House Of Yum that Bobby will really enjoy! It’s important to do things special for those we love!
My daughter-in-law Abigail made it for us and we all loved it so I’m giving it a try!

FRIDAY
I made air fryer cod last week and it was scrumptious! I off-roaded and did not follow my menu because I just found frozen cod in the freezer and got hungry for it! So I tried it in the air fryer.
It was DELICIOUS!!!! I’m so excited for you to try tonight’s cod recipe from Tatiana at Berry And Maple.
SATURDAY
For me, a pot roast is pure comfort food! I make this dish often because it is a one-pot meal and just so good! I even make it for the company if we are having a casual dinner. And it gets rave reviews!
My son Christopher loves pot roast too and it reminds him of home! How sweet!
SUNDAY
Today’s menu sounds like Easter dinner. And it almost is. When early spring rolls around I really start wanting potato salad! Not to toot my own horn, but this potato salad is the best you will ever make. Seriously!
My Nani made it and taught me. Everyone wants me to bring this potato salad to picnics and other gatherings!
So as an early Easter treat Bobby and I are having ham and potato salad!

This week I’m making this beautiful lemon loaf cake. It’s perfect for Easter so I’m making two and freezing one for Easter dinner. This loaf cake is lemony and a beautiful early spring dessert!
