The apple trees here in Lancaster County are resplendent with beautiful fruit. And that means I just can’t wait to try out both savory and sweet recipes that are full of apple-y flavor. We love to eat seasonally! On The Menu, this week has a few summery recipes and fall as well!

We are still finding lots of produce like peaches and tomatoes and beans and peppers. So I’m enjoying all our bucolic countryside has to offer! Ready for a week of good eating?

MONDAY

We are celebrating the end of the summer! For me, summer ends when kids go back to school! I was a primary school teacher for years and the first day of school is will forever be connected with fall.

Saying that the weather here is sweltering so we are still grilling and eating picnic food. Sorta the best of both culinary worlds.

TUESDAY

What if you would marry ranch dressing with BBQ sauce. Oh, what a great full of flavor sauce to slather on chicken! Thank you, Jennie at The Diary Of A Real Housewife.

I think this BBQ sauce will be a new favorite!

WEDNESDAY

I need you to know two things right off the bat…these are not your mamma’s salmon cakes, and it is okay to use canned salmon! I adore salmon cakes and these are so full of great flavor. I’ll add a little bit of finely chopped red bell pepper to the mix!

Everyone I serve these tasty fish cakes to rave!

Here’s an easy way to make delicious homemade applesauce: Peel and core about 4 pounds of assorted apples. It’s important to use tart and sweet apples together. Don’t use delicious or golden delicious apples, they don’t have much taste. Put them in a pot with 1/2 cup water and 1/2- 1 cup sugar. Simmer on high heat and then turn the heat to low and cook for about 20 minutes. When the apples are very soft turn off the heat and add the juice of 1 lemon and 1/2 tsp cinnamon. If the applesauce is not smooth you can blend it in a blender or use an emmersion blender. YUM! My aunt added cinnamon red heart candles to her applesauce and it was fabulous!

THURSDAY- SLOW COOKER DAY

As I often say, we are big soup eaters at StoneGable! And we love to eat soup for dinner. This is a beautiful hearty soup with some really amazing flavors! YUM!

FRIDAY

Don’t these enchiladas look just glorious? I really love Tex-Mex food and my fav is a great enchilada! Can’t wait to make this recipe from Nagi from Recipe Tin Eats!

SATURDAY

Tilapia has gotten a bad rap in the last couple of years because of the unsanitary ways tilapia is farm raised. If you are careful about where you buy this fish and know how it is raised it is wonderfully delicious!

SUNDAY

This chicken is an easy meal and another Pantry Meal! Pantry Meals are dinners I can put together with what I usually have in my pantry, frig and freezer! Who doesn’t love French Onion Soup? Add chicken and this looks so yummy!

SWEET TREAT OF THE WEEK

These pretty apple turnovers are made with puff pastry. That means no making pastry dough! Just thaw the puff pastry and cut! Uber easy, right?

  3. Yvonne what a wonderfully tasty menu you did this week. Everything looks great and nothing complicated, which is what I love about your meal plans.
    Tomatoes are in their glory now in Michigan and they are enjoying them for breakfast lunch and dinner ! The window for fresh garden tomatoes is so small we have to enjoy them every day.
    Thanks so much for doing this each week. I’m sure it takes time to put together. It helps me plan my menus and I usually include several of your recipes. I appreciate you for this.

  4. Such yummy sounding recipes this week. That slaw recipe will be on the top of my list to try. I can imagine how wonderful it will be. This is a recipe will suit my daughter who takes her lunch to work as she likes to eat health foods.
