ON THE MENU WEEK OF SEPT 27TH
Guess what veggies are in season in my area? Leeks, tomatoes (still), and butternut squash, and tons and tons of pumpkins! Lancaster is the self-professed pumpkin capital! We are eating soup and stews, and we are loving it! Our menus are a bit heartier now that the weather is getting cooler and the evening light is getting shorter! YUM!

Here’s what’s ON THE MENU for the week of Sept 27th!
MONDAY
I can’t wait to make these glorious tacos from Becky at The Cookie Rookie. They look amazing and are so easy! They bake them in the oven! Whoot Whoot!
Mondays are busy work days here and I look for an easy to make dinner. Easy and delicious! Hope you enjoy the tacos!
Tacos are such an easy, delicious, and humble meal! So I kick them up with what I call FIXINS’. Chopped tomatoes, sliced black olives, more cheese, sour cream, shredded lettuce, pickled banana peppers, and more!
- BAKED SPICY CHICKEN TACOS
- SHREDDED LETTUCE, DICED TOMATOES, AND SLICED BLACK OLIVED FOR OVER TACOS
- AIR FRYER HOMEMADE REFRIED BEANS
- MEXICAN STREET CORN CASSEROLE
TUESDAY
I’ve loved Tuna And Noodle Casserole since I was a child! YUM! I remember my mom making it for dinner! It is comfort food to me!
Thanks, Zona at Zona Cooks for adding crushed potato chips to the top of this already favorite recipe!
I really like how Zona serves up her casserole in individual serving! You know I think everything (almost) tastes better in single servings!
I keep a stack of great individual-serve white ovenproof dishes on hand for recipes like the Tuna Noodle Casserole! Individual servings bake in less time too! I pop a couple dishes in my Air Fryer Toaster Oven and they are piping hot and ready much more quickly than if I made one big casserole.

WEDNESDAY
I get almost giddy when I see a recipe with the words puff pastry in it! And here is a gorgeous recipe on the menu for the week of Sept 27th! Puff pastry is so easy to use and it makes an ordinary recipe something so special!
Alex is a full-time foodie blogger and this gorgeous recipe comes from her blog It’s Not Complicated!
I’m paring the galettes with my favorite arugula salad. This recipe would work great for company and for lunches!
Not all puff pastry is alike. Look for BUTTER puff pastry. It‘s a little more expensive but is far superior!!! I get mine at Whole Foods. Trust me on this one!

THURSDAY
Don’t you love the look of tonight’s salmon recipe? I’ve made this several times and it is so so good!
This scrumptious recipe comes from Krista @ Joyful Healthy Eats.
If a recipe calls for cream I often substitute equal parts evaporated milk and Greek yogurt. Just stir them together and add them to the dish. Easy!
FRIDAY- MOVIE NIGHT AT HOME
I can’t wait to make tonight’s main dish from Kelley at Chef Savvy. If you love egg rolls but don’t want the calories of the fried wonton wrappers tonight’s dinner is a great and easy alternative!
Have you discovered the “bowl” craze yet? The recipes for tonight are perfect to put next to each other in a bowl and eat together! We often eat our dinners bowl-style!
SATURDAY- SALAD NIGHT
I’m in the mood for a delicious Yankee Pot Roast! I’ve made this recipe for decades and my family loves it!
And if we have leftovers we eat the pot roast the next day and it tastes even better! The image below is so so old! So is the recipe but it is so so good!
Bobby and I often eat leftovers for lunch. So when we are cleaning up from dinner we put the leftovers in individual glass containers with plastic lids that are the perfect size for lunch the next day!

SUNDAY- INSTANT POT SOUP DAY
French Onion Soup is one of those foods that are almost universally loved! Who wouldn’t love a recipe that has caramelized onions, great stock, bread, and cheese! Leave it to the French to take humble food and turn it into something absolutely scrumptious!
Tonight’s main dish is from one of my favorite foodie bloggers, Erin at Well Plated!
French Onion Soup is all about the stock! Make sure it has lots of flavor. Those glorious caramelized onions need a rich glossy bath to swim around in! Some recipes call for chicken or veal stock. Pass that up. Use beef stock to get that deep flavor!
SWEET TREAT OF THE WEEK
My friend Ann from On Sutton Place has a beautiful blog! Her styling really speaks to me! And so do her recipes.
This week’s sweet treat are triple citrus cookies. These cookies are covered in a sugary citrus mixture so as soon as you bite into the you get an explosion of flavor and crunch!
I bet my house will smell so good while they bake!

I look forward to your Friday recipes and almost always find a new recipe to try. This week I will make your pot roast. It is similar to mine, but yours has the addition of red wine. We almost like pot roast the next day, after all the flavors meld. One of our favorite leftover ways to use it is to cut the meat and veggies up and make hash; adding some Worcestershire to it. Hash can be eaten for any meal of the day. Also will be trying the citrus cookies. Thanks for another good post. Happy weekend!
