Happy October! Menu Plan October 4th is the perfect way to start this fall month!

MONDAY- SOUP DAY!

Here’s the skinny on this glorious soup! I literally made it skinner. Here’s how you can too. Trade out the cheese for 1 cup regular extra sharp cheddar and 1 cup lo-fat cheese (aka cardboard).

Change out the heavy cream for 1/2 cup low-fat milk and 2 TBS heavy cream. If it is too thick add a bit of water.

This soup serves 8 and is 4 WW Smart Points. Roasted Cheesy Cauliflower Soup is very filling! Serve it with a slice of crusty bread (small slice) and a fall inspired salad.

TUESDAY

This glorious fall-flavored chicken recipe from Simply Scratch is one I can’t wait to make! My family will love it!

How do you plan for a heartier, more point intensive (WW) dinner? Here’s what I do. I start my day by counting dinner and then count lunch and finally breakfast. I find I can eat one or two hardboiled eggs for breakfast along with a fruit for zero points(B) or 4 points (G).

Then I usually have a big salad and a zero point protein along with a homemade salad dressing and a few nuts or fruit or croutons added in.

And I use the WW app on my phone and computer. They are amazing!!!!!

I don’t always eat everything on the menu every day. I cook for Bobby and he eats a hearty dinner. This system works for me!

CHICKEN IN SAUCE

WEDNESDAY

Pork and fall go and in hand for me! And I’m giving this gorgeous pork recipe from Natasha Kitchen a try!

Wednesdays are such nice middle of the weekdays! Bobby has the afternoons off and I like to make a nice dinner. Sometimes we have friends over for a fun evening and sometimes it’s just the two of us.

I’m a little addicted to Bananagram so we just might have to have a rousing game. You can see this fun, fast-paced word game HERE.

THURSDAY

I love a great roasted chicken! It makes my house smell divine and makes enough for dinner and lots of leftovers! And I save the carcass to make my own stock.

This sounds silly, but when I roast a chicken I feel like I am doing life right!

It is tempting to default to a store rotisserie chicken. But they are often small and overcooked and dry! They lack flavor and succulence! All but Costco’s chicken. Buy them!!!!

Try roasting your own whole chicken. It’s easy and wait till you taste how delicious it is! This chicken post is twelve years old when blogging was like the wild west! It’s old but the recipe is delicious!

ROAST CHICKEN

FRIDAY

Friday’s are laid back meals! Bobby and I often catch up on a Netflix series or watch a great movie and eat dinner in the family room!

This week we are having these beautiful tacos from Serene at House of Yumm

SATURDAY

For me, it’s all about the sauce! Even a little pan sauce makes any meat taste so much more delicious! So, while Bobby scoops the sauce over his food I sprinkle it. And even a sprinkle is like heaven!

Here’s an easy family dinner that can be made on a weeknight too! I love a good chuck roast! And I’ll make extra for leftovers! I have lots of plans for those gorgeous pieces of flavorful beef!

It’s Bobby’s Birthday on Monday so we will celebrate on the Saturday before. I’m making this gorgeous PUMPKIN TOFFEE CRUNCH CAKE.

Are these soup or pies? BROCCOLI CHEDDAR SOUP MINI PIES. Wow! Gotta make these!

    Thanks for these yummy looking recipes! I would love to hear what you do with leftover roasts of pork, chicken and beef. With only 2 of us, we always have leftovers. I usually make curry or occasionally pot pie, but would so appreciate some new suggestions!

  5. I love all your receipts but you mentioned not long ago you lost some weight. Good for you. But how did you loose weight with these wonderful recipes? Can you share how you loss?

    1. I just said in this post I don’t eat all of it and I start by counting dinner (small portions) and work backward. Then I plan and count lunch and finally breakfast. I love the thought of sweets but I don’t usually eat them.

  6. Funny how you called low-fat cheese—cardboard. I used to use the low-fat versions of cheese and sour cream, but then learned they often have twice as much salt as regular cheese and sour cream.With my husband’s high blood pressure, that’s not a good substitute.Now, we use Greek yogurt in place of sour cream and nobody notices the difference. We use the full-fat cheese, but just eat less of it. I have some nutritional yeast in my pantry I plan to try, in place of cheese in a pasta recipe.I wouldn’t replace all the cheese in a recipe, but maybe start with a quarter of it and see what it’s like. It’s supposed to give a nice cheesy flavour.
