ON THE MENU WEEK OF OCT 17TH

 

It’s so nice to put a meal in the oven and have the whole house smell scrumptious! It’s one of those little pleasures of life! Even our garage smells amazing on days I’m doing a lot of cooking. This week’s menu is a salute to fall and all its delicious aromas! YUM! Here’s what’s on the menu this week!

MONDAY

Fall means a big bowl of hearty soup! And this Sausage And Kale soup is perfect for dinner tonight! So easy to put together on a busy workday!

Truth be told I don’t like kale so I may swap it out for swiss chard. And I’ll change this recipe just a little bit more by adding the suggested cannellini bean swap in Holly’s recipe for chickpeas.

TUESDAY

I grew up eating salmon cakes but the ones on the menu tonight are not my mom’s salmon cakes!

These are filled with aromatics and have such a gorgeous complex flavor. And I serve them with homemade tartar sauce which is so much better than anything you can buy in a store!

If you don’t have an Air Fryer, this is the one I recommend and use.

WEDNESDAY

I have never roasted a flank steak before. I usually grill it quickly.

We love flank steak and this recipe makes this delicious meat easy enough for a weeknight meal.

Leftovers will be used on Saturday and for lunches! I love food I can cook once and use another time… or two!

I love mashed potatoes but not everyone in our family loves them by themselves. I mash them with celery root and tonight I’ll try mashing them with leeks. Oh, I love the mild onion flavor leeks infuse! And these mashed should be wonderful with the steak!

THURSDAY

We eat with our eyes first and this bone-in pork chop recipe makes me so hungry. It’s beautiful!!!!

The grilled polenta cakes sound divine. I’ll switch out the goat cheese for feta.

FRIDAY

The story goes that a chef after a long night of cooking for his clientele would make “bacon and eggs” using pasta. And that is how Pasta Carbonara was born. However it came about it is a gift to the world!

What an easy and so delicious main dish. This dish should be in your culinary repertoire because it is great when you just don’t know what to cook and don’t have much on hand!

This recipe is an O-L-D post! I just can’t bring myself to update the pictures because they are of my son and daughter-in-law when they were newlyweds. And this dinner was at my beloved StoneGable!

SATURDAY

Today’s fish pie is a first for me. It sounds divine! We’re having a couple friends over for a cozy fall dinner so I’m excited to have them also be taste testers!

SUNDAY

Roasting a chicken is one of the top 10 things I love to do! My home smells delicious, the chicken tastes delicious, I have leftovers, I make chicken stock with the carcass, I can make a scrumptious light gravy or sauce from the drippings and I can make this chicken with my eyes closed!

Just a head’s up… this post is horrifically old. The images aren’t quite right but the recipe is really perfection! If you make one thing this week make this chicken and then make it often!

TREAT OF THE WEEK

October is pumpkin time and what’s better than infusing a coffee cake with delicious pumpkin flavor? I’m making this for a brunch party this weekend!

  2. I was so looking forward to the roast chicken recipe, but there wasn’t a recipe or link. It looked delicious

  3. We had your Creamy Cajun Pork Chops and Perfect Roast Chicken this week. They were delicious! We used a store bought Cajun seasoning for the chops and found it it to be on the salty side so we are looking for a diy Cajun seasoning so that we can control the salt content. We did not follow the chicken recipe all the way. We injected the chicken with store bought Cajun style butter marinade and then buttered and seasoned the skin and cooked it on a bed of carrots, onions and celery. The chicken was a little dry but still good so we will need to figure out the proper time for our oven, but the veggies were divine! Thanks for the recipes!

  5. I love your recipes. You save my life some weeks! I recently made pumpkin bread and it had a “grit” when you bite down sometimes. I googled it and found that it is because of the lactose in the process of canning the pumpkin and that some brands of pumpkin are worse than others. What brand of canned pumpkin do you use?

    1. Hmmm, interesting! I’ve never had that problem but what a disappointment! I have always used Libby’s.
