Summer produce is plentiful at roadside stands around the countryside and tomatoes are going riotously in our garden. I think there is nothing quite as good as a garden-grown tomato with a little salt! So, you will see them on every menu this week!

MONDAY
I try to have staples in my kitchen cupboard, refrigerator, and freezer to make what I call “pantry dinners”.

TUESDAY- SOUP DAY
It’s HOT outside but that doesn’t stop me from making some delicious soup! I make a big pot and freeze the leftovers for lunches.
Chicken Taco Soup is what I call a dump recipe. It’s a pantry recipe for sure! I just dump all the ingredients in a pot and cook. Wow, is this soup good!
Since we have lots of fresh local corn, I’ll take the time to take it off the cob and put it in the soup.

WEDNESDAY

My homemade coleslaw is also on tonight’s menu. The leftover coleslaw is fabulous in a sandwich! So yummy!

THURSDAY
Bobby is a steak-and-potato guy! So once in a while, I treat him to a really good steak dinner! And for me, it’s all about a great cut of steak and a super delicious pan sauce to build layers of flavor.

You have hit it out of the ballpark this week!! I am a true foodie, took some cooking classes in Europe, it’s my main hobby, in addition to all things home maintenance and decor. I can’t wait to make the creamy Tuscan shrimp and the grilled peach and chicken salad this week. I am already getting my soup list ready for this fall and winter, as well as starting my pantry stock up for fall. I have a rotation of 10 homemade soups that I make. I start in September and make a large pot of soup every week for about 8 weeks. One portion is for dinner that night, then I freeze different portions. I usually have a full freezer to select from on those busy days, or during a cold snowy winter day. I round out the meals with muffins, bread sticks, etc. We help home school our 2 granddaughters a couple of days a week, and on those days our daughter works from, and we take lunch for the 5 of us, and they love soup. It’s a great way to give your family a great nutritious economical meal.

I came across Salt and Lavendar’s shrimp dish about a year ago. I cannot tell you how absolutely delicious this recipe is! We love it!!! I’ve served it over pasta, rice, mashed potatoes, or in a bowl by itself. Yum!!
