This week’s menu is quite hearty and filled again with wonderful fall flavors! I’m going to cook a mini Thanksgiving this week. No not the whole meal but a turkey breast and a very yummy Thanksgiving-inspired side dish! Here’s what’s on the menu week of October 31st…
MONDAY

Have you made Nani’s Sauteed Rice yet? It’s a staple in our home and goes so wonderfully with chicken dishes! But we make it with most meats.

TUESDAY
I get done working a bit later on Tuesday so I need a meal that is either frozen or that I can put together quickly!

WEDNESDAY
Today we are having a mini Thanksgiving dinner! I don’t make a turkey breast very often and I should! They are easy to roast and are so so good. And a turkey breast offers great leftovers. Plus my favorite thing, a carcass for soup!

I love make-ahead gravy! I’ve been making a big batch for several years now. I usually pour all the Turkey pan drippings sans the grease into the make-ahead gravy and it is heavenly! And the gravy is done!

THURSDAY
Our family loves chili! I have Thanksgiving on my mind so I am making a vat of chili, having it for tonight’s dinner, and freezing the rest for lunches for all of our stay-over family!
I’ll also make an extra cornbread and freeze it too.
We love to serve chili “bar style”. We set out bowls, spoons, and lots of toppings like nachos, cheese, sour cream, jalapeno peppers, onions, and the kitchen sink. LOL!

I loved Stuffed Acorn Squash SOOOOOO much that I am reprising it again this week. It was a HUGE hit at StoneGable. We are having family here at the Tanglewood house for the weekend and I can’t wait to make this recipe for dinner!

SUNDAY
I’m a girl who loves a good sauce! However, so many sauces call for heavy cream. And if you are watching what you are eating, heavy cream can be too high in calories and fat.
I found a way to make a sauce that tastes like you used heavy cream! Here the easy recipe: Use no-fat Greek yogurt and a splash of evaporated milk in lieu of cream. I use Greek yogurt in a 1-1 ratio to cream and add a couple TBS evaporated milk to the sauce to thin it out a bit. It is delicious! And creamy and hardly any points at all! I hope you will give it a try!
Aren’t these pork chops dreamy good? I have made them before and just like all of Christina’s recipes at Eatwell 101, they are fantastic!
I think these pork chops would be tasty over noodles, but since I’m GF we will be eating it over rice.

I’m so excited to make my friend Ann’s Pumpkin Snickerdoodle Skillet Cake! Doesn’t that sound delicious? Bobby loves snickerdoodle anything and I feel the same way about pumpkin. Sounds like a marriage made in heaven, if you ask me!
