Most of you know that we are huge soup eaters here at StoneGable! And I’m thrilled to be sharing one of my families most coveted soup recipes. My mother, grandmother, her mother and generations before made this better-than-scrumptious old word VEGETABLE SOUP! I still follow the recipe that has been passed down for generations! It’s the best veggie soup you will ever eat… not bragging, just truth! Try it once and you will be hooked. And I’m serving it up with an impressive hand made ladle from Polder Old World Kitchen. STONEGABLE VEGETABLE SOUP

This is the best vegetable soup you will ever make. Beefy and filled with yummy vegetables!
Print Recipe
Cook Time:2 hours 30 minutes

Ingredients

  • 1 TBS olive oil
  • 1 ~ 2 lb boneless chuck roast
  • 2 large soup bones with some meat on them. (I like shin bones)
  • salt and pepper
  • 10 cups water
  • 1 1/2 large onions quartered
  • 1 cup dried beans I use navy beans
  • 2 cups diced onions
  • 4 large celery stalks chopped
  • 2 cups carrots cut into rounds or 1 bag of baby carrots cut in half
  • 1 TBS salt
  • 1/2 TBS pepper
  • 1/2 cup barley
  • 2 cups fresh green beans cut into 1/2 inch pieces
  • 3 cups cabbage cut into 1 inch chunks
  • 2 turnips cut into 1/2 inch cubes * Do this! It makes such good flavor!
  • 3 large Idaho potatoes cut into 1/2 inch pieces
  • 2/3 cups frozen corn
  • 1/2 cup frozen peas
  • 2 15 oz cans of stewed tomatoes
  • 1/2 cup alphabet noodles

Instructions

  • In a large stock pot add the olive oil over medium heat.
  • Salt and pepper the meat and add it in bathes to the pot. Brown on all sides.
  • Add water, onions and dried beans to the meat in the stock pot and let simmer for 2 hours, skimming the top of the water occasionally.
  • Add diced onions, celery, carrots, salt and pepper. Bring back to a simmer and cook for 20 minutes.
  • Remove the meat and let it cool enough to be shredded.
  • Add the barley, green beans, cabbage, turnips, potatoes, corn, peas and stewed tomatoes. Bring back to a simmer and cook for another 20 minutes.
  • Remove from heat and add alphabet noodles and meat. Stir everything together. Serve piping hot!

Notes

Feel free add or subtract veggies you like. Please make this with the turnips. They add a wonderful flavor!

    Oh my goodness how I love old world craftsmanship! And Polder certainly does not disappoint. The ladle is gorgeous! I also have my eye on the measuring cups. I would feel transported to another time and place using these lovely tools in my kitchen.

    1. I have their 1/4 cup scoop, and it’s my go-to spoon for scooping and measuring! It’s beautiful!

  50. I’m confused by a few things in the recipe.
    1. Step 1 says add the meat “in bathes” Meaning ______??
    2. Do you add the soup bones in step 2?
    3. I have to leave out barley (and the noodles) due to severe gluten-intolerance. Should I add anything in their place such as a little cornstarch, assuming the barley might add some thickening quality as well as flavor?
    Thank you!!! I think my husband and I ate a piping hot bowl of this kind of soup years ago outside on a cold, autumn day at an old settlers’ type fair in a park. SO good, especially eaten outside in the cold! I’ve been wondering what soup it was all these years!!! 😀

  83. My hubs made vegetable soup today while watching football. Don’t they go together? No turnips however, the store did not have any. He usually adds a bay leaf. Our French bread is cooking in the oven. A ladle pictured would round out the day. Happy Fall, it’s my favorite.

  105. Love that soup! We serve soup quite often in our home. (Except when the grand kids come over then it’s soup for adults and mac and cheese for the grandchildren). I vote for the rolling pin, the southern bell scoop and the man size spurtle, well actually I love all of it. They are definitely a work of art. Love this collection!   107. I would Love the Italian Villa spoon. It has such an elegant Tuscan look! But I would use it for serving foods from all over the world. But, especially all the variation of pastas from the diverse regions in Italy—tagliatelle from Puglia, Bigoli from the Veneto, tortellini from Lombardi, Linguine from Campania. Lasagna from Calabria, Strangozzi from Umbria,and Parpardelle from Tuscany.

  108. Could you do the soup in a crockpot?

    1. Yes. I would brown my meats well and also cook my onions, celery and carrots in the meat juices until the onions are translucent and then put it in a slow cooker. Give it a try and tell me how it works for you.

  110. The simple scoop is just my style. Everything they make is beautiful! I have family antique butter paddles and butter mold, so I have a deep appreciation for wooden utensils. Of course, mine are definitely more utilitarian looking!
