PUMPKIN SPICE BAKED OATMEAL
If you like pumpkin pie you will love Pumpkin Spice Baked Oatmeal! It has all the great flavor of pumpkin pie, but it’s a whole lot more healthy! And here’s the best part… in Lancaster County we eat Baked Oatmeal for breakfast! Oh YUM! We serve it up warm and pour milk over it. It is soooooo incredibly heavenly scrumptious. Perfect for fall… or any time of the year! And while it’s baking it will make your house smell good enough to eat!
PUMPKIN SPICE BAKED OATMEAL
A hearty, pumpkin pie tasting breakfast. Too good to be good for you... but it is!

Ingredients
- 1 ~ 15 oz can pumpkin puree
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 TBS pumpkin pie spice
- 1/2 tsp salt
- 3/4 tsp baking powder
- 1 tsp vanilla
- 1 1/2 cups milk
- 2 1/2 cups dry old fashioned oats
- 1/2 cup pecans chopped (optional)
- 1/2 cup raisins optional
Instructions
- Preheat oven to 375 degrees.
- In a large mixing bowl add pumpkin, brown sugar, eggs, pumpkin pie spice, salt, baking powder and vanilla. Whisk together. Add milk and whisk until incorporated.
- Add the oats, pecans and raisins to the pumpkin mixture and stir together.
- Spray an 8 x 8 inch baking dish with cooking spray and pour the mixture into it.
- Bake for 45 minutes until done.
- Serve hot with milk. Pumpkin Spice Baked Oatmeal can be refrigerated and then reheated as needed in the microwave.
Notes
Other add ins would work in place of the pecans or raisins like other nuts and dried fruit. Even chocolate chips would be a special treat!

I have been fortunate enough to enjoy baked oatmeal in Lancaster County… my favorite being blueberry baked oatmeal at the Family Cupboard back when it was over by the Harvest Drive Inn. It was the most amazing breakfast food I had ever eaten! Your recipe looks so good and really easy….I will definitely give it a try!

We love this and have been making it often. It is like cake without the guilt. I make it with almond milk and coconut sugar. Today I tried mashed bananas, walnuts and chopped apricots…banana bread (ish) ! Next comes applesauce, apples,almonds.

Do you include the milk in the recipe? The instructions list when to add all of the ingredients except the milk and vanilla
Hi James, The milk in the recipe goes into the baked oatmeal. I use an extra pool of milk to eat this yummy baked oatmeal in. Hope this clears things up.
Just took this out of the oven and had my first serving. OMG…..it’s out of this world yummy. So easy to make. I put all ingredients and equipment out on my counter last night…except milk and eggs…So it took very little time to put together.

I think this sounds fabulous! I’m wondering if you pressed the brown sugar down to measure, or just scooped it in lightly? I know I should use stevia but it sure doesn’t have the brown sugar flavor! Thank you!

Yum, I love everything pumpkin! I have many recipes that I make in the fall using pumpkin puree. Love them all! So I will try yours and add it to my recipes. If I don’t watch out I will look like a fat pumpkin after the holidays! Its so much fun to eat all the holiday goodies!
