BEAUTIFUL AND THIN EVERYDAY PANCAKES
I love fluffy homemade pancakes. But I’m not a fan of them when they get so thick it truly is like eating cake. I like my pancakes thin and still fluffy! Stacked with butter in between and covered with real maple syrup or rolled up with berries or sausage links inside! YUM!!!! These everyday pancakes are in between regular buttermilk pancakes and crepes. And leftovers are amazing when toasted and spread with butter and jam and eaten like a piece of toast! Make the batter ahead and finish the pancakes the next morning! Let’s make homemade everyday pancakes!

BEAUTIFUL AND THIN EVERYDAY PANCAKES
Ingredients
- 1 cup flour
- 1 tsp baking powder
- dash of salt use a NOT kosher salt
- 1 TBS sugar
- 1 egg
- 3 TBS butter melted and divided
- 1 cup whole milk or buttermilk
Instructions
- The key to fabulous pancakes is NOT to over mix the batter!!!!
- Put flour, baking powder, salt, and sugar in a large mixing bowl. Whisk to incorporate.
- In another bowl whisk the egg and then add 2 TBS butter and milk. Mix well.
- Add the egg mixture into the flour mixture and mix until JUST INCORPORATED. If there are lumps, don't worry! It's okay!
- At this point the pancake batter can be covered and put in the refrigerator overnight and cooked the next morning.
- Heat a TBS of butter in a cast iron skillet until hot. The skillet must be hot or the pancakes will stick. Add a scoop of pancake batter. It will spread out and be thin. When little "bubble" start to appear on the top of the pancake, turn it and cook the other side until golden.
- I preheat my oven to warm or 170° and put the pancakes on a rimmed baking sheet to keep them warm until they are served.
- Serve pancakes with butter, maple syrup, honey, fresh fruit, jam, link sausage or bacon! Serve them stacked up high or roll them up too!

You can also try super thin pancakes, more like a French crepe without adding the baking powder, I love making them for the children on weekend mornings, with real maple syrup of course and blueberries when they are in season. Our youngest daughter loves to spread them with nutella, oh so French! My recipe is slightly different but I am sure they taste much the same!

I think the eggs are missing from the ingredient list. Just made pancakes from scratch for my 3 year old granddaughter, so much better than the stuff in the box!!

This looks like a good pancake recipe. I like my Swedish pancake recipe I got from a Swede’s wife. My Dad liked the Lunds mix. They are very thin! I could not turn them!! My spouse won’t eat pancakes so I miss them. I do like thin pancakes. I never knew I could freeze them with wax paper. What a great tip. Thank you!!

Several have asked about the egg in the ingredient list but it’s not corrected. Assume you took Sunday off so let us know the answer when you get back on. Also, I find that butter browns and burns when using in a hot skillet…can’t oil be used for these? My husband loves thin yet fluffy pancakes.

To the question of how many servings, I doubled the recipe and it served 8 double stack pancakes, so 2-4 servings for the single recipe. I used homemade buttermilk (squeeze half a lemon, pour the rest of the way for the milk to sit 5 minutes, then stir) and this recipe is among the best pancake recipes I’ve ever made

Might be better with the milk vs buttermilk but the batter was not thin enough and never spread. I ended up adding milk to the second batch and it worked much better.
Good to know, Noelle. Sorry, you had trouble with the buttermilk. Maybe your griddle was too hot.
This is my go-to pancake recipe — just like the ones my grandpa used to make. While my kids are fluffy pancake people, my partner and his kids request these and love the crispy edges as much as I do. For the crispiest edges, I cook them in vegetable oil flavored with a little butter.
