Soup was made for fall! Warm, hearty, and delicious soup! Today I’m featuring seven of my favorite fall soups with lots of ideas for tweaking them! I love soup because making them not rocket science! You can make the soups according to the recipe or off-road a bit and add something you like or take out what you don’t! These delicious soups make enough to feed a family and still have leftovers for lunch the next day! Yum! Let’s make soup!

Roasted Butternut Squash Soup With Sausage And Sage

Butternut squash is one of my favorite fall vegetables. It has a mild buttery pumpkin flavor that is so pleasing. When these flavors are combined with sausage and sage, something even more delicious happens! This soup tastes like fall in a bowl.

In this recipe, I demonstrate the best way to cut up a butternut squash and chop it. The soup recipe calls for sage sausage and an apple for extra sweetness. Yum! Use homemade chicken broth or a good store-bought version. You can substitute the milk for coconut milk for another tasty spin on this recipe.

Roasted Butternut Squash soup can be made in a Dutch oven or in a slow cooker.

If you don’t want to add sausage, you can add cooked bacon to garnish the top of this soup, as well as a dollop of sour cream or créme fraîche.

Serve it with a grilled cheese sandwich to make a meal.

Switch out the roasted butternut squash for roasted pumpkin and make Pumpkin Soup. Or add cooked wild rice and serve up Roasted Butternut Wild Rice Soup. Although this soup is not overtly fall-ish, it is one of my favorites any time of the year! Not only is this soup filled with healthy ingredients like beans, corn, fire-roasted tomatoes, onion, and peppers, it is super easy to make. The beauty of this soup is that you can add other ingredients like jalapeno peppers if you like it a bit more spicy or other veggies as well.

I like to top this soup with cheddar cheese, sour cream, tortilla chips made in an InstantPot, and thinly sliced green onions. When tortilla strips are added, this soup can also be called Chicken Tortilla Soup. This soup is gluten-free. Just make sure to check that you use gluten-free chicken broth and use corn chips as a garnish. Make this soup vegan-friendly by substituting the chicken stock for vegetable stock and chicken for tofu. Another fun substitution is to change out the cheddar cheese for another dairy product like queso fresco.

Its chicken soup base has lots of the same flavors as Chicken Taco Soup but has the addition of several other ingredients like cream cheese, heavy cream, and a can of creamed corn to make the broth lighter in color and creamier.

Like Chicken Taco Soup, embellishing it with lots of toppings is a must. My little grandsons love this soup topped with sliced avocado, cheese, and lots of tortilla chips. This may not be your typical fall soup recipe, but it will feel right at home on game day or at a tailgate!

My grandmother, Nani, taught me how to make Ham and Cabbage Soup. And Nani’s mother taught her. And so on and so on. This is the flavors of my childhood. This is pheasant food at its best! It was probably originally made like most soups of long ago, with scraps and leftovers. People back then slaughtered their own animals and used what came out of their gardens! Dishes like these did not cost much and fed a large family. And my Nani was one of eleven children.

Ham and Cabbage Soup is my culinary heritage! And my gift to you! This is Nani’s recipe, with a few conveniences like canned tomatoes and chicken broth from a box. No matter, it is perfect for fall. Fall is cabbage time, so get a big cabbage to make this healthy soup. And if you like lots of extra meaty flavor, add a few ribs of country spare ribs. This recipe makes a lot. Enough for dinner and some to freeze.

I like to eat it for dinner with Delicious And Easy No-Knead Bread slathered with Amish butter. I think Nani would be so pleased to know her Cabbage Soup is famous!

Italian Tortellini Soup With Sausage And Spinach

If you want a hearty soup, Italian Tortellini Soup With Sausage And Sage just might be it!

When you’re craving something hot, hearty, and filling, whip up this recipe for Italian Tortellini Soup. Italian sausage, cheese tortellini, and spinach swim in a flavorful marinara-type broth. Make it on the stovetop or slow cooker.

This is Bobby’s favorite soup because it has pasta in it! You can also swap out the tortellini and add gnocchi, and swap out the sausage for cooked diced chicken breasts to make Chicken Gnocchi Soup. And if spinach is not your favorite, substitute Swiss chard or kale. There are lots of variations to this delicious soup. Serve this one pot meal with Parmesan cheese sprinkled on the top and a few snipped fresh herbs. And Italian garlic bread, of course

Hearty Ham And Bean Soup

Ham and Bean soup was my Daddy’s favorite. But not this scrumptious kind. He liked it out of the Campbel’s can! Actually, I did, too, growing up.

When I moved to Lancaster County, I fell in love with one of the staples of our area, Ham and Bean Soup, made with a bag of 16 Bean Mix. The bean mix even has split peas in it, and I loathe peas! But in this soup, split peas taste like lentils to me. Along with the beans, I like to add a couple (or more) of smoked ham hocks to the soup. This delicious protein is what gives this soup its rich, smokey flavor.

I think this Ham And Bean soup is classic comfort food! Again, a soup from my past, but actually much better! Hearty Ham And Bean Soup is great for game days or any other fall day, too! Serve it with Butter Topped Beer Bread.

The Best Loaded Baked Potato Soup

Potato soup is another blast from the past! My grandmother made a less loaded version. This soup has everything you would want in a loaded baked potato. Potatoes, bacon, sour cream, onions, cheddar cheese, and just enough grated carrots to add a hint of sweetness.

Loaded Potato Soup soup is company-worthy! It would be a hit on a soup bar or potluck. And, of course, on game day!

Add a little more of this (like the bacon) or a little less of that! Add a package of French Onion Soup Mix to give this soup a different taste that is scrumptious, or make a healthier version by using sweet potatoes instead of white potatoes. Sautee leeks and add them to the base of this soup to make Potato Leek Soup. Sautee mushrooms and add them along with a can of cream of mushroom soup to make a delicious Mushroom And Potato Soup.
